Skinny Buffalo Chicken Lettuce Wraps

Skinny Buffalo Chicken Lettuce Wraps – In the crock pot!

What you need:
~ Chicken ~
24 oz boneless/skinless chicken breast (this is where those charts that I posted may come in handy!)
1 celery stalk
1/2 onion, diced
1 clove garlic
16 oz of fat free, low sodium chicken broth (1 can)
1/2 cup of hot cayenne pepper sauce (I use the Tabasco brand Buffalo Sauce…always! I will not switch!)

~ Wraps ~
6 large lettuce leaves, Bibb or Iceberg (I always use Iceberg)
1 1/2 cups of shredded carrots
2 large celery stalks, cut into 2 inch matchsticks (optional)

**FYI: Make as much chicken as you want…no need to make 24 oz unless you’re feeding four people (just cut back on the amount of liquid used). I used 3 – 3 1/2 regular sized chicken breasts and it fed two of us until we were full. I also used the pre-minced garlic that you can buy at the store, but you’re welcome to use fresh if you want!

What to do:
In your crock pot, combine your chicken, onions, celery stalk, garlic, and broth (enough to cover your chicken – you can add some water if you need to). Cover and cook on high for 4 hours.

**FYI: If you want to, you can add buffalo sauce to the starting mixture. It helps the chicken soak up more of that awesome flavor!

After the chicken is cooked, take it out of the pot, keep 1/2 cup of broth and get rid of the rest. Shred your chicken and put it back into the crock pot with 1/2 cup of broth and your hot sauce. Keep cooking on high, covered, for another 30 minutes or so.

**FYI: I wish I had used less liquid after I had shredded the chicken. For lettuce wraps, you don’t want your filling running all over the place. It was still delicious, but eyeball it! Use however much you think.

The recipe says it makes 3 cups of chicken (because I haven’t made the full amount, I’m trusting that this is true!).

For the lettuce wraps, place as much chicken as you would like in each leaf. Top with shredded carrots, celery, and either ranch or blue cheese. Add extra blue cheese crumbles on top if you want! YUM!!
